I know this isn't about getting great performance. But a 400 MHz K6-3 would allow you to use a great variety of operating systems without throwing it out the window in frustration. To a lesser extent a 400 Mhz K6-2 would also. If you are going to use it at all, it might as well be the best it can be (provided the parts can be obtained for little or nothing).
K6-3's are pretty price-y though. I think I may just go K6-2 or whatever dsio is willing to sell to me.
