If you don't game, don't buy into SLI. SLI adds to the price quite a lot, so for just £50 you can get an NForce4 Abit AN8-V with all the features you need.
I'd say go for an NForce4, or Nforce 4 Ultra motherboard with a PCI-E slot.
The money you save from avoiding SLI can buy you a simple 6200PCI-E card. This means you've got plenty of upgrade potential.
You don't need SLI to power two monitors, any GFX card will power two.
