Can you have 2 RAID 1 arrays in a 4 channel RAID card???
Just wondering if you could do this??? You could right???

Depending on the card, possibly.
Some RAID cards are quite happy creating more than one array. Others limit you to one array.
Some will even let you create an array of arrays!
