A GPU is a highly specialized maths processing chip, which is very fast at the types of calculation used for displaying fancy pants GFX things. A CPU on the other hand is far more of a workhorse can can do many different types of calculation, but doesn't excel so much at a particular type. In theory you could swap them, but since each is designed to do a certain task, it would result in poorer performance, generally.
