After initial disappointment with the original Phenom processors, AMD showed off its upcoming 45nm ‘Deneb’ desktop chip – now confirmed as Phenom II – for reviewers at an event in Texas this week, and overclocked the second-generation quad-core part to what some observers said was 6.3GHz. High OC's at Subzero is not uncommon.
But if they were to do 6+GHz with it running at 100c stable, that would be very impressive.

They are getting into the 4s with air cooling, from what I've read. That's not a bad deal either; it puts them in the realm of Penryn, which is realistically what AMD will be competing against for most (if not all) of 2009, as the current Intel roadmap indicates that Intel intend to make Nehalem a boutique item (something like 5% of production will be Nehalem by the end of 2009). That doesn't mean that Intel can't decide to change plans of course.

You mean you guys don't have liquid nitrogen cooling? I thought we all did! If these puppies will do a solid 4 Ghz on air, AMD may start raking in some sorely needed bucks.

I maybe way off base here, but isn't rather unusual for a company to Show off a new chip by using unattainable cooling?

Not particularly. The show is aimed at the techie/enthusiast crowd. Generally speaking, the performance you can get with extreme cooling will give you some idea of the headroom available in the design, and thus some idea of how scalable the design is, as well as how robust the manufacturing process is.

Impressing the enthusiasts with 6Ghz extreme cooled machines might do well for them when said enthusiasts are asked by the less knowledgeable what to buy. Nerds have alot of purchasing power indirectly.
