My Winnie runs 2.8Ghz on air with little help. Its a matter of HT multiplier. 220Mhz is the point at which Athlon 64s decide their HT speed is too high for the most part. Drop the HT multiplier to 4X then set the HTT speed to 250Mhz, and make sure at that speed your RAM is still ok (this may involve reducing your RAM speed unless you have very good DDR).

They actually go like stink once you sort out the quirks of the Athlon 64 platform.

By the way, that 250Mhz is for a 3200+. Depending on your speed (and CPU multiplier) that may or may not work.

I could be wrong, but doesn't the memory controller on Winchester freak out if all 4 DIMM's are filled?

It actually is, depending on your RAM and mobo. I've had plenty of Winchesters that high. Only thing is its better to run them at 2.6Ghz, since that can be done with a 4X HT multiplier while 2.8 needs 3X, and usually another DDR divider.

2.4Ghz is the easy one since all the clocks line up perfectly, DDR333 HT 4X 240Mhz HTT 10X Multiplier.
